This light and refreshing Mediterranean Rice Bowl is made with tuna and hummus, tomatoes, cucumber and a premium blend of Mahatma® Jasmine Rice with Red & Wild Rice all tossed in a simple vinaigrette.
Step 1
Cook rice according to package directions. Let cool completely.
Step 2
Toss together cucumbers, tomatoes, olives, red onion, oil, vinegar, salt and pepper; set aside. Toss tuna with hummus and celery; set aside.
Step 3
Toss rice with arugula; divide among 6 bowls. Top with cucumber and tomato salad, and tuna mixture. Serve with lemon wedges.
Feta cheese, spinach and green or Kalamata olives.
