In a medium saucepan, bring coconut milk, water, turmeric, ginger, salt, and pepper to a boil; stir in rice blend. Cover and reduce heat to low. Simmer for 15 minutes or until all the liquid is absorbed; remove from heat and fluff with a fork.
Arrange sweet potatoes, spinach, avocado, and soft-boiled egg over rice; sprinkle with chopped pumpkin seeds.
